Spotlight on One of UCEDC’s Newest Board Member: Dr. Elaine Sanders

We are thrilled to introduce Dr. Elaine Sanders, one of UCEDC’s newest board members. With a distinguished career in workforce development, education, and community empowerment, Dr. Elaine brings a wealth of experience and passion to our team. Her journey in the field began in 2001 at Bergen Community Action, where she served as a program manager, helping individuals develop essential skills and secure employment.

Over the years, Dr. Elaine’s expertise has grown, leading her to roles at Columbia University and, ultimately, at the Community Food Bank of New Jersey (CFBNJ). As the Director of Workforce Development, she has created programs that equip individuals with the skills and resources needed to succeed.

A Focus on Food Entrepreneurs

At the Community Food Bank, Dr. Elaine has focused on supplying aspiring food entrepreneurs with the knowledge and assets  they need to thrive. Through her programs, she has witnessed firsthand the potential and passion food entrepreneurs bring. Dr. Elaine  has noticed a growing trend of individuals seeking to start their food businesses, particularly those from underserved communities. However, many face challenges accessing the necessary training, funding, and mentorship to realize their dreams.

Dr. Elaine’s programs address these challenges by providing participants with practical food preparation, business planning, and marketing training. She has also worked to connect entrepreneurs with resources, such as commercial kitchen space and financing, essential for starting and growing a food business.

Joining UCEDC’s Board

Dr. Elaine’s workforce development expertise and understanding of the unique challenges faced by food entrepreneurs make her an invaluable asset to UCEDC. Her insights and guidance will be instrumental in helping UCEDC develop programs that empower individuals and effectively strengthen small businesses in our community.
